For kids stuff I found stremio and torrentio to be easy if a bit convoluted to set up.
Did you set up recurring searches for new episodes? Idk what it is set to be default but you have to set each show to do episode searches at a given interval.
Honestly I use Google family link. I know people on here are against Google but it just makes monitoring the kids easier.
I got my kid a rugged smart phone. It’s pretty locked down and whatnot because he’s young but unfortunately there’s no way I’m going to send him to Public school without a phone, just in case.

I’m one of the crazy people who spent 4 grand on a 85 inch dumb display meant for stores to use as digital signage. Honestly a great decision. It’s no home theater display but damn if it isn’t just as good as any smart tv I’ve seen. I just have it hooked to a raspberry pi running librelec.
I personally use fluent reader on my PC and phone. It’s the best one I’ve found so far.
I love a good personal library as a background for my video calls but honestly I do digital books cause I don’t have room.
Nextcloud is technically a solid product if your goal is to replace all the Google services. Personally I think it’s too heavy and I’ve had issues with using it vs using specialized apps for each service I’m replacing.

Here to say Seafile. I also don’t like nextcloud. I used pydio cells for a while but the windows sync client absolutely never worked for me. Seafile has been flawless for 2 months for me.

The epub reader needs work imo, however it’s more than usable and its what I use myself. Once the reader gets a few qol updates I’ll always recommend it over Cal-web or kavita.
The 85 inch display I’ve got coming is listed as 4k HDR with full array local dimming. As far as actual accuracy is concerned, I’ve heard good things about Sharp NEC specifically but I won’t know until my unit eventually arrives.
Sharp NEC is the brand I bought from. They have models you can put a raspberry pi directly inside of it. I’ve got a pi with librelec waiting for the screen to show up. However they’re really expensive. Sceptre makes more affordable dumb TV’s but they don’t make very large ones.
I’ve got an order out for a digital signage display to replace my living room tv. It was more than I would’ve spent on a “smart” tv but it’s a dumb box that I can plug anything I want into. If they sold dumb TV’s still I’d probably upgrade some of the other TV’s my family has, but fuck smart TV’s.
Docker is a great choice with lots of good tutorials. I personally use podman since all my servers are now running Fedora server and podman is installed by default.
