do it! there are tons of how-to videos and articles online about fermentation. my only warnings are:
i would say it is only marginally more difficult than pickling. you just have to calculate how much salt you need in the brine by weight - generally 2-5% of the combined weight of the water + veg - then you chuck the stuff in a jar and wait. the easiest way i’ve found is to weigh the veg in the jar covered with water, then pour the water out, add salt and pour back in so you have the perfect amount of brine. the only downside about it is you have to wait a while (up to a couple weeks depending on what you want).
hell yeah for pickled red onions - such an awesome item to have in your fridge at all times and they make most things better. i forgot about my most recent batch for a few months but that’s the beauty of pickling lol, they are still delicious even now. super easy too, i recommend anyone reading this who has never tried before to give it a shot - it takes like 10 minutes and most of that is boiling water/vinegar.
have you ever tried lacto-fermenting vegetables? it scratches the same itch pickling does for me, and it gives the veg a flavor that is hard to get otherwise. i like to do hot peppers mostly, but you can chuck anything in there really.

get it in writing that they accept the risk that comes with not upgrading so it can’t come back on you. all you can do is CYA and make recommendations - if management does not agree with your recommendations make sure you have it documented that you informed whoever is making the decision of the risk.
if you think your employer will somehow still try to hold you accountable for this, save the aforementioned correspondence using something your employer does not manage i.e. a personal device. you could also let other people than this specific individual know about this so it isn’t just your word vs his.

i am curious: since those topics make up such a large portion of the content i see on lemmy, do you find that you get a good number of posts to look through without them? i mostly browse all and find i can get through just about everything i’m interested in clicking on in like 30 minutes per day.
maybe it is just a symptom of how i browse the internet and my semi-niche interests, but i find the non-linux hobby communities here to be rather lacking. i know the solution is to post to them myself and i try to, but frankly i don’t have that much to post about. it also takes some willpower to keep posting to a 10 person community and get maybe a couple comments every few posts if i’m lucky, but that also could be that my posts aren’t very interesting lol

i had this conversation with my dad recently about how shitty everything is now with ads etc, and his response boiled down to “i don’t care enough”. sucks to see people being complacent in being subject to greedy corporate whims. as much as i want people with that mindset to care, i have no idea how to effectively argue against “i don’t care”.

my dad and i did the 1 chip thing a few years back and we got a fun time and a funnier video out of it. not much more to it really
that’s great, but most vegans you speak to will tell you that we aren’t telling the people who lack the privilege we have to go vegan. we’re asking our neighbors, our bosses, our friends - people in similar if not the very same life circumstances as us - to walk a couple aisles over from where they buy the meat in the grocery store and buy some beans instead.
people love to bring up the privilege thing, but i would argue that it is entirely irrelevant. the entire point of veganism is to do what is reasonably possible and practicable. not to tell people who don’t have the privilege to be so discerning about their diet that they are going to hell or something.
you aren’t the only one, shit is scary lately. but i’ve personally taken that as initiative to go do/buy the things i want (that i can afford) now instead of later in my life when i have more money/time, because realistically i don’t know that i will have more money/time when i’m older if things keep up as they are right now.
it hurts to think about.
i say something like this often in real life, but despite it being plainly observable in daily life other people still don’t agree.
it’s on all scales too, or at least it feels like it. moving everything to streaming, always online, etc. want to play a competitive video game with your friends? give a corporation root-level access to your home computer. ads everywhere some greedy ass in a suit can think to stick them whether you pay or not, yet everyone complies like this is normal and i get singled out for caring about our rights as consumers.

trackmania has that in common with basically all speedrunning streams/content. super nice to have in the background since it can be repetitive and you can pay attention if they get a good run going :)
and there are people who speedrun probably every game you’ve ever enjoyed, so there is plenty of options!
the part i struggled with most is realizing that everyone i know just doesn’t care about animals enough to stop eating their favorite sandwiches, the rest is pretty straightforward. keep on fightin the good fight
